Gaskets are used to seal two flat surfaced components or flanges. Seals is a term for the parts that are used between engine parts, pumps and shafts that rotate. Gaskets are used as static seals
to fill the space between two or more mating surfaces, generally to prevent leakage from or into the joined objects while under compression. Gaskets for specific applications, such as high pressure steam systems, may contain asbestos, but these have health hazards and so non-asbestos gasket materials are used when feasible. 

A dynamic Seal is the one that is used between engine parts, pumps and shafts that rotate, like an oil seal is used for prevention of fluid leakage between two components in motion, be it rotatory or sliding. A seal also prevents entry of foreign materials like dust and is usually mounted by press fitting the metallic casing.

In case there is damage to the gasket or the machine, gasket replacement suffices but in case of a seal breakdown, it needs complete replacement of both the seal and bearing.
